Basic Cacao Truffles
3/4 C Almond Butter
1/2 C Agave Syrup
1/2 tsp Vanilla
1/3 C Cacao grated butter, melted (add last)
1/4 C Water
1/3 C Cacao Powder
Pinch of salt.
Blend all ingredients except for cacao powder in a Vita Mix on low speed until smooth. Add cacao powder and blend just until incorporated. Place in a pan in the freezer or refrigerator until firm but not frozen.
Roll into individual balls and chill until ready to serve.
Optional: after rolling into balls, roll in cacao powder or ground pistachio or cacao nibs. Ground walnuts are also an option or dried lavender.
